Zucchini Fritters


Prep Notes

Zucchini Fritters with feta and mint. So delicious and EASY!:

Ingredients

  • 1 lb shredded zucchini
  • 1/2 cup Follow Your Heart Vegan feta cheese crumbles
  • 1/2 cup chopped dill+parsley
  • 1 jalapeno pepper, diced (optional)
  • 1 organic, free-range egg
  • 1/4 cup chickpea or cassava flour 
  • salt, pepper
  • Avocado oil

Directions

  1. Place the zucchini in the colander and squeeze the excess water out.
  2. Place all the ingredients into a medium mixing bowl and stir to combine. (If the mixture looks too runny, add a bit more flour).
  3. Heat 2 T. of avocado oil and fry the fritters in a large non-stick skillet on medium heat for about 2-3 minutes on each side.
  4. Transfer the zucchini fritters onto a paper towel-lined plate and let them cool down for 5 minutes before serving.
