Thai Quinoa

Yields

4 servings

Ingredients

1 cup quinoa
2/3 cup coconut milk
1 cup water
1/4 tsp of sea salt
1/2 cup red pepper, diced
2 cloves garlic, minced

1/2 cup broccoli florets, chopped

1/4 tsp turmeric powder


Directions

  1. Rinse quinoa.
  2. Bring coconut milk and water to a boil.
  3. Add quinoa, salt, turmeric and garlic.
  4. Bring back to a boil, cover, and reduce heat.
  5. Cook for 12-15 minutes or until the liquid is absorbed. Turn off heat and let rest, covered.
  6. In separate greased (with coconut oil) pan, sauté red peppers and broccoli with 1/4 tsp salt for five minutes or until just tender
  7. Gently combine the veggies and prepared quinoa, test for seasoning then serve.
