Marinade:
2 T. apple cider vinegar
2 T. Dijon mustard
2 T. pure honey or maple syrup
2 T. avocado oil
1 t. smoked paprika
Sea salt and pepper
Roots:
2 medium sweet potatoes - cubed
4 carrots – large chop (similar in size to the potatoes)
Instructions:
Mix the marinade and set aside.
Preheat oven to 375 F and grease 1 or 2 baking sheets (be sure the roots can be baked in a single layer, not too close together)
Chop the roots and place in a gallon zip lock bag or large bowl.
Pour marinade over the vegetables and allow to marinade for20-30 min at room temperature.
Spread evenly on baking sheet(s) and roast for 40-45minutes, tossing halfway through.
