Sweet Potato-Kale Casserole


Ingredients

  • 2 T. Ghee or coconut oil
  • 2 garlic cloves, smashed into paste with salt
  • 1 small onion, diced
  • 1 bunch kale - stemmed and chopped into small pieces
  • 2 large sweet potatoes, sliced 1/4" thick
  • 2 tsp sea salt
  • 1 tsp cinnamon
  • Fresh grated nutmeg
  • 1/2 cup pumpkin seeds
  • 1 egg - beaten

Directions

  1. Preheat oven to 400 deg. Drizzle potatoes with coconut oil and saltliberally. Bake 35-40 min. Remove to large mixing bowl.
  2. While potatoes are baking, sauté garlic and onions in 1 T. Ghee, justuntil soft (5 min) Add kale and wilt slightly – 2 min
  3. Add remaining salt, cinnamon, and grate in a hint (less than 1/4 tsp) offresh nutmeg. Remove and add to the potatoes and beaten egg. Mixwell and transfer to prepared baking dish. Top with pumpkin seeds.Bake at 375, 35 min.
