Lemon Cannellini w/broccoli & sundried tomatoes


Ingredients

  • 1 15 oz can organic cannellini beans - rinsed.
  • 2 garlic cloves - minced
  • 1 T EVOO
  • 1/2 medium onion - chopped
  • 2 T tomato paste
  • 1-1/2 cups water
  • 1 T pink salt
  • 1/2 tsp pepper
  • 2 T dry oregano
  • Juice and zest of one lemon
  • 1 cup broccoli florets
  • 1/2 cup sun-dried tomatoes



Directions

  • In large pot over med-high heat sauté onion in EVOO until translucent. About 5 min. 
  • Add cannellini beans and season with sea salt. Sauté 5 min.
  • Add garlic and sauté 30 seconds
  • Add tomato paste, water, salt and pepper. Stir to combine. 
  • Add broccoli, sundried tomatoes, lemon juice and zest. 
  • Simmer 20-25 min. covered until broccoli is just crisp-tender.
