2 tbsp olive oil
1 yellow onion, diced
2 carrots, diced
4 cloves garlic, minced
1 rib celery, diced
1 tsp dried oregano
1/2 tsp black pepper
7 cups vegetable broth
1 can white beans, drained and rinsed (or any bean of choice)
Juice of 2 lemons (freshly squeezed)
1 handful fresh kale, chopped - ribs removed
1/4 cup tahini
1 tsp lemon zest
1/4 cup fresh dill
1 tsp turmeric
In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes.

Add the vegetable broth, drained and rinsed can of white beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered.

Stir in the kale, fresh dill, lemon juice, and zest. Cook another ten minutes, for kale to wilt.
Stir in the tahini and turmeric until combined and heated through. Enjoy!
