Elotes Casserole

Yields

6 servings as a main dish, or 12 as a side dish

Ingredients

2 cans (14 oz.) organic whole kernel corn + ¾ c. Elmhurst Farms nondairy creamer (pulse together in food processor, just until creamed but still has texture. This is your healthy creamed corn!

2 cans (14 oz.) organic whole kernel corn with jalapeños (do not strain or drain) *

1-pint Vegan sour cream

1 stick unsalted Miyokos Vegan butter, melted

16 oz Namaste or Bob’s Red Mill corn muffin mix

2 organic, free-range (preferable local) eggs, beaten

1 cup Chosen Foods Classic mayonnaise

Zest of one lime

1 Tbsp. lime juice

Tajin seasoning

1 cup crumbled Vegan Feta cheese


Directions

Preheat oven to 350 degrees F

Grease a deep 9-by-13-inch casserole dish with avocado oil spray

In a large mixing bowl, mix the cans of creamed corn and whole corn (remember, don’t discard the juices!) with the sour cream, and stir to blend well - by hand, not in a processor or blender.

Add the melted butter and stir to combine

Once the mixture is smooth, stir in the eggs, then the boxes of corn muffin mix

Pour the batter into the oiled baking dish and bake 45-60 minutes until golden brown on the edges and a skewer in the center comes out clean

Let cool on a rack for 15-20 minutes

Separately, mix the mayo with the lime juice and zest and season to taste with salt and pepper if needed, and put into a squeeze bottle or zip top bag

Just before serving squeeze the lime mayo in squiggles all over the top of the casserole, then add the crumbled Feta cheese evenly over the top, and sprinkle with the Tajin seasoning or chili powder, or set these items on the side for people to garnish themselves. 

Serve slightly warm or at room temp
