Creamy Garlic Dressing (Vegan)


Ingredients

  • 1 bulb garlic, roasted(below) and skins removed 
  • 2/3 cup Elmhurst Farms non-dairy milk, unsweetened (cashew, oat, or almond)
  • ½ cup sunflower seeds raw – soaked for at least 1 hour
  • 2 tablespoon cashews raw – soaked for at least 1 hour
  • 1 tsp Dijon mustard
  • 2 tablespoon nutritional yeast
  • ¼ cup coconut vinegar or rice vinegar
  • 1½ tsp fresh thyme chopped, or use 1/2 tsp dried

Directions

  1. Preheat oven to 400 degrees. Cut top end of whole garlic bulb, revealing the upper part of cloves. Drizzle with avocado oil. Wrap in parchment or foil, and place on a baking sheet. Roast for 35 min. Allow to cool before squeezing the garlic cloves from the skin.
  2. Blend all ingredients except thyme until smooth. Stir in thyme before bottling.
