Chocolate Almond Butter Cookies


Ingredients

  • 1 cup of raw almond butter
  • 1 organic egg
  • 2/3 cup coconut sugar, date sugar or monk fruit
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of cinnamon
  • 1 teaspoon of baking soda (aluminum free)
  • 1/2 cup of Lilly’s Stevia sweetened, dark chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. In a medium to large bowl, mix together all ingredients except the chocolate chips.
  3. Once ingredients are mixed, gently fold in chocolate chips - just a few swirls and rotations of your spoon or mixing spatula will do.
  4. Form dough into balls about 2 tablespoons each.
  5. Space out onto baking sheets with room between each ball, and press down lightly to flatten out a tiny bit.
  6. Bake 9-10 minutes.
  7. Allow cookies to fully cool off, then remove them from the baking sheet with a spatula.
